Whether self-caught or store-bought, fresh fish makes a delicious ending to any summer evening.

Plucked fresh from the sea, white fish makes an ideal neutral palette on which to play up the colors and flavors of the season. Choose a firm species like halibut or cod—or, for a special treat, consider John Dory—and prepare it simply according to the following recipe. Pair with a glass of crisp, well-balanced Nobilo Icon Marlborough Sauvignon Blanc and you’ve got a perfect summer meal.


6 5-oz. fillets of a firm white fish, such as John Dory, halibut or cod
3 Tbsp. clarified butter
Sea salt

1 orange, peeled & diced
1 lime, peeled & diced
1 lemon, peeled & diced
1 seedless cucumber, diced
1 tsp. serrano chile, seeded & minced
2 Tbsp. extra-virgin olive oil
Freshly ground white pepper
Sea salt

Heat oven to 350°. Season the fish fillets with salt. Melt clarified butter in a large skillet over medium-high heat until butter is foaming. Add fish, skin-side down, and cook until skin is crisp and releases easily from the pan, 3 to 4 minutes. Flip over and finish by roasting in the oven until just cooked through. Meanwhile, combine salsa ingredients in a small pot and warm gently. To serve, top fish with a scoop of salsa and finish with salt and pepper to taste.
